PROCESS: Strict selection of the oldest vineyards (more than 100 years old), producing 2500 kg/ha. Controlled fermentation below 28ºC.Minimum maceration of 25 days. Spontaneous malolactic fermentation at 22°C in new barrels.
AGEING: 16 months in oak barrels: 100% French (Jupille and Tronçais)
SERVING TEMPERATURE: 17-18◦C
WINE TASTING NOTES: Intense black cherry in the glass with great depth. Well covered, showing its youth at the edges. Interesting nose. Extremely intense and clean bouquet. Perfectly integrated fruit and wood. Notes of fresh red fruits, liquorice and the quality toast of the barrel. Very pleasant light balsamic notes. In the mouth it has a medium body with a good presence of highly polished tannins. Sensation of warmth after a well-balanced mouth. Good length and persistence.
